SALARY: £38,613 per annum + TRONC + Benefits

DUTIES

Your duties as a Sous Chef / Second Chef will include:

• Assist the Head Chef with creation and execution of daily specials with all F&B outlets

• Ensure food is cooked, prepared and the presented to the required standard

• Maintain the Kitchen's target Gross Profit % through the effective control of food costs, wastage and portion control

• Ensure daily / weekly procedures including temperature checks, food labelling/dating and storage, together with relevant H&S procedures are carried out and that records are kept up to date

• Ordering of stock and ensuring stock levels are kept at agreed levels in addition to being rotated systematically

• Ensure all food purchases support the hotel's environmental and sustainability ethos and credentials

CANDIDATE REQUIREMENTS

• Level 2 Food Safety and Hygiene certification

• Proven experience in a busy hotel

• Strong leadership skills with the ability to motivate and manage a team

• Excellent attention to detail and commitment to maintaining food quality and consistency
