Reed Hospitality is very excited to be working with a Private Member's Club in the heart of London, looking to recruit for a Sous Chef
Key Responsibilities - Oversee the kitchen operations and maintain high standards in the absence of the Head Chef.
- Ensure all food preparation and cooking across sections follow established recipes and methods.
- Guarantee that all dishes are properly presented before being served in the club.
- Align food production levels with the number of guests being catered for.
- Taste all "mise en place" during preparation and verify the flavour and accuracy of all dishes.
- Consistently apply portion control policies and plating standards.
- Maintain a clean, organized kitchen environment in accordance with hygiene standards.
- Ensure proper handling and maintenance of all kitchen equipment and utensils.
- Store "mise en place" and food items correctly, with accurate labelling of preparation and use-by dates, in line with food safety protocols.
- Confirm the kitchen is adequately stocked with equipment and utensils to meet operational needs.
- Regularly sample food to monitor preparation quality and ensure compliance with statutory temperature requirements.
- Contribute menu ideas to support planning and innovation.
- Order food supplies from approved vendors, adhering to budgetary guidelines.
- Keep pricing information on order and stock sheets up to date.
- Conduct and record stock takes accurately and in line with required standards.
- Ensure all kitchen staff adhere to established standards, policies, and regulations.
