The Role:
This role is all about real wood-smoked BBQ - you'll be responsible for preparing, smoking, slicing, and serving our meats to perfection. You'll be working with fire, smoke, and time-honoured techniques to create incredible brisket, ribs, pulled pork, sausages, and more. During service, you'll slice and plate meats directly in front of customers, ensuring consistency and top-quality presentation.
Key Responsibilities:
Smoking the Meats - Managing our smokers, monitoring temperatures, and cooking everything low and slow to perfection.
Meat Preparation - Trimming, seasoning, and handling large cuts of meat before they hit the smoker.
Running Service - Slicing meats to order, plating dishes, and engaging with customers at the pass.
Stock & Quality Control - Managing meat storage, checking deliveries, and ensuring nothing goes to waste.
Food Safety & Hygiene - Maintaining high standards of cleanliness, following food safety regulations, and keeping prep & service areas clean.
Record-Keeping - Accurately logging cooking temperatures, food safety checks, and cleaning schedules.
Manual Labour & Heavy Lifting - Working with large cuts of meat, moving logs for the smoker, and handling kitchen equipment.
What We're Looking For:
Kitchen experience preferre d, but we will train the right person. If you've worked with smokers before, even better!
Physically fit & hardworking - This is a physically demanding role involving heavy lifting and long shifts on your feet.
Reliable & punctual - Early starts are a must, so ideally, you live close to Leyton.
Attention to detail - BBQ is an art, and every detail matters.
Team player - We're a small, close-knit team who work hard, have fun, and take pride in what we do and communication skills.
Passionate about food & service - You'll be at the heart of our kitchen, ensuring every tray of BBQ is perfect.
Food safety & hygiene knowledge - Level 2 Food Safety & Hygiene qualification is essential

Flexibility to work , early mornings, evenings and weekends
Schedule:
- Shifts start at 7 AM, Wednesday to Sunday.
- Evening shifts are also possible.
- We are closed every Monday and Tuesday.
