Chef De Partie

Reed Hospitality is delighted to be working with a respected Private Member's Club in the heart of London, recruiting for an experienced Chef de Partie

Responsibilities

• Prepare all food items on the assigned section in line with established recipes and methods.
• Communicate promptly with the Sous Chef or Head Chef to ensure sufficient ingredients are available for mise en place.
• Taste all dishes and mise en place to verify correct seasoning and flavor, confirming with senior chefs as needed.
• Plate dishes according to portion control guidelines and visual presentation standards before service.
• Adjust production levels appropriately based on business volume.
• Maintain a clean and organized kitchen by following proper hygiene and food safety procedures.
• Handle and maintain all section equipment and utensils correctly and safely.
• Offer creative input during menu planning discussions.
• Train team members in the "clear as you go" method to promote cleanliness and efficiency.
• Prevent errors by regularly reviewing standards and expectations with the senior kitchen team.
• Uphold high kitchen standards in the absence of the Head Chef.
• Ensure all dishes are consistently presented to the required standard before leaving the kitchen.
• Taste all mise en place and final dishes to ensure recipes are followed and flavors are accurate.
• Store all mise en place and food items correctly, with accurate preparation and use-by date labels, in line with food safety policies.
• Contribute menu ideas to support innovation and seasonal planning.
• Ensure junior kitchen staff adhere to all kitchen rules, standards, and procedures.
• Maintain a positive attitude and motivate the team, especially during challenging periods.
